Made these and they were delicious! Hubby and I opted to throw a few torn-up spinach leaves on top of the leek mixture before adding the egg & it was great. My 2yo & 5yo opted for no leeks & the spinach on the side, but each ate two plain baked eggs with cream, so it was a win all around. Thanks!

YUM!!! What a great recipe. So simple and so delicious. This was my first time cooking with leeks and I loved them. I polished off all the leftover leeks, eating them right out of the pan standing over the stove - they were that good.
