No knead bread is for real! I have been baking it now for two years and it never dissapoints. I don't use as much yeast as this recipe, which makes it more economical. Take a look at my recipe - www.aresrocket.com/bread complete with pictures and metric equivalents.

We love the 5 minute bread. Last year we made the longer no-knead version and found it to be excellent also, but more time consuming. We just had a boule for breakfast of the 5 minute variety and both agreed that it couldn't be better. It was so EASY to cut off a piece of dough upon first arising and put it on the already prepared peel, which we keep ready with the cornmeal. No dishes to clean up either b/c the stone stays in the oven. I would say the process took a total of less than 3 minutes. Setting the timer was the biggest chore! Thanks!

I've tried the recipe you discussed on NPR for "Five-minute artisan bread." However, I'm trying to avoid wheat, so I made it with spelt and buckwheat flour. The bread is baked and resembles an enhanced hockey puck. Is there anything I can do to make the recipe work with spelt flour? (Longer rising, more yeast, etc.) I'd really appreciate any advice.

Spelt bread in stores is outrageously priced.

I wanted to let you know an alternative vessel for baking bread. I am a Demarle at Home representative and we sell silform molds for crusty bread baking. These are the same professional nonstick, flexible molds that Subway uses to bake their bread (although there's is not crusty because they don't use the steam method) We offer 2 types at the moment. One bakes 4 baguettes at a time and the other a high round loaf. No need to use the baking stone, pizza peel and grains/flour anymore as our molds non stick and are perforated and let the steam and hot air in and out. You just need to put the tray for water on the top shelf rather than below the bread. We also sell other flexipan molds that have different shapes that make great bread and are wonderful for cinnamon rolls etc. Our company is the inventor of the Silpat. Please check out my websight.
