I've made a version of these using preserved lemons in place of the fresh ones, and lots of thyme (no rosemary). There's almost nothing you can do to a roasted potato that I wouldn't love!

Thank you, that was pretty quick - seems I just happen to have "fresh" rosemary and thyme so I guess I will do these tomorrow - will let you know. Would the potatoes have seemed as good if the chicken wasn't dried up? But then, you probably had some salad left over??

Roasted potatoes and other root vegetables are a death knell for chicken breasts. What could be better? They always taste better and they are much easier to eat.

You can't go wrong tossing something hard and crunchy with salt and olive oil and leaving it in the oven until it gets crispy.

and people insist on frying potatoes, when ther are recipes like that out there!

Yay! Thanks! Truely delicious looking potatoes. I think they are one of the best vegetables nature came up with - they take on added falvours so well. It is deep frying that brings a bad name to something so wholesome.

Extra chili flakes is how I want mine!

What timing! I was just looking for a potato recipe. And.. as a previous poster suggested, I'm making it with roasted chicken. Nothing like comfort food when it gets so cold.
