Why the heck would anyone peel grapes? That's where much of the flavor is!

Exactly! Grrr...

Seeding concord grapes is a real chore. I have done it myself. Spent almost a full day doing it for a tart for a group. It turned out wonderfully, but I decided that I would only make concord grape tarts for two. Or maybe only just for me.
supposedly you can heat them and then put them through a food mill or sieve to get rid of the seeds. Not sure about that.

I made a spiced concord grape jam that had me popping the grapes from their skins, saving the skins, cooking the pulp, deseeding the cooked pulp--o la la, is that ever a pain in the butt--then adding the skins back in and cooking some more. Great jam, but don't know that I'll ever spend another 8 hours that way.

Constance - that jam sounds delightful, but 8 hours to make it does indeed sound torturous. You must have hoarded those jars! :)
