Some of the best kale I ever had was off of someone else's veg plate at Prune. I really had no idea that it could be so good until that day last summer.

I like to marinate raw kale in the following: 2 tbsp white balsamic, 1 tbsp rice vinegar, 1 tbsp olive oil, 1 tbsp honey, salt to taste (mostly to cut acidity). Chop it up as you recommend and then mix it by hand with the dressing. Let sit for 25 minutes. I add honey til I can't smell the raw green (usually no more than an additional 1 tsp). You can mix this with regular greens, add nuts and currants (I like pomegranate arils).
